Talking to Damien Pignolet, I opined that I wouldn’t want to be opening a new restaurant at the moment. “But we are,” he said mildly. I’d forgotten that he and his business partner Ron White picked up the infamous Baron’s site in Roslyn Street, Kings Cross, which they hope to open in six months. “It’ll be new and shiny and Sydney loves that — at least for a little while,” he said archly. Indeed.

Meanwhile, under the ASTC heading, another shiny new joint opened late February — Pyrama (56 Harris Street, Pyrmont, Ph 9692 8844) — with part-owner Jim Larcan at the stoves. Half Greek, half Italian, Jim has been at W in Woolloomooloo, Ripples Café in Milsons Point and Kables at the Four Seasons. He’ll be using organic poultry and as much sustainable produce as he can. We’ll drop in for a meal and let you know how it goes.
