CIRA's young talent award

Demi-chef at Buon Ricordo, David Wright, has won this year’s CIRA (Council of Italian Restaurants in Australia) award for young talent and it sounds like a contest worth entering. Part of the prize is two weeks at the ALMA International School of Italian Cuisine in Parma, Italy, including accommodation and return airfares. That’s one very serious, not to mention attractive, food town, famously home to Parma ham but less so to staggeringly rich hot chocolate, the kind you have to drag your spoon through to stir.

CIRA President Armando Percuoco, also Wright’s boss at Buon Ricordo, said: “The Young Talent Award is part of CIRA’s efforts to foster young chefs in Italian cookery,and increase their knowledge of Italian food.“

I’ve reviewed Percuoco’s latest cookbook on this website and mention the last chapter filled with recipes from his restaurant’s staff. David’s sweet and sour rabbit, a rustic stew including spuds, brown sugar and vinegar, looks like a winner too.
