When asked what else the Swiss eat besides fondue, the PR person for Swissôtel (68 Market Street, Sydney, Ph 9238 8810 www.swissotel.com/sydney) replied “cheese, cheese and cheese”. Not exactly. At the 2009 Swiss Food Festival (July 31 – August 16) chef Martin Kaspar has prepared a menu inspired by the Region du Lac Leman, the French bit of Switzerland. So, as well as fondues and good Swiss cheese, there’ll dishes such as papet vaudois — sort of a sausage, leek and potato hotpot — and fricasée de pork a la genèvoise and tarte au vin blanc accompanied by wine made by Swiss winemakers in Australia. Sounds like as close to fun as you get in Switzerland.
