Local heroes
Clever restaurateurs Willa and (chef) Shaun Arantz of Racine @ La Colline Winery (42 Lake Canobolas Road Orange, Ph 6365 3275) have come up with a clever idea for their menu. They introduced an apple symbol to signify 75 per cent or more local produce was used in a dish. After a few weeks of this, Shaun questioned a waiter as to why she wasn’t selling the sardines on the menu. More or less, the response was there aren’t a lot of sardines around the Central West — and customers preferred the local dishes. “It felt like a break-through,” Shaun commented. Very good news — Sydney restaurateurs take note.
