And still at the Show, we love a survival story and this is a corker. Yarra Valley Salmon not only survived the Black Saturday bushfires, it won a bronze medal in the Fine Food Show and was given a pat on the back by the Victorian Government for its environmental standards. Low stocking, no chemicals or antibiotics and gentle hand-milking of the caviar were cited as contributing. Not to mention terrific flavour. We do miss sevruga, beluga and osietra from wild sturgeon in the Caspian, but while the environmental ban is on them, this will do more than nicely.
