May's a good time for fish with most species available and a few at their peak. You'll find barramundi, both wild and farmed, as well as silver perch and fine, farmed Murray Cod.

Large line-caught local snapper has found its way onto Catalina's very fishy menu. Paul McMahon is roasting the fillet and serving it with potato and garlic mash and lemon caper butter.
