Chefs around town are still relying more on farmed fish at this time of year but crabs, particularly spanner and blue swimmers are good. You’ll find the blue swimmers in crab cakes at Café Steyne in Manly and mud crab (which you can get all year) is always popular at Beverly Hills Chinese served with salty egg yolk.  Pacific oysters are peaking and you’ll always get them beautifully handled at the Bayswater Brasserie. Keep an eye out for grey mackerel and warehou in blue and silver varieties as they’re in top condition too.
