We're still seeing the excellent citrus we've had for the past three months but this month lemons are particularly good. You'll find them adding a subtle fragrance to ricotta at Cafe Viva in Balmain where the fresh cheese is served with poached eggs, bagels and smoked salmon.  And, staying on the peninsula, it's the star ingredient in Finola Healy's caramelised lemon tart at her eponymous restaurant in the bowlo.
