This month's cold weather is ideal for getting into stews and other warming dishes. Forecuts of veal are ideal for this kind of treatment and work beautifully in the ragu in Portofino's lasagne. Otherwise you could try a scaloppine in the veal involtini with parmesan, fresh breadcrumbs, currants and lemon rind at the Palisade Hotel. It sings with Sicilian flavours.
