We’d normally be looking at great game at this time of year but grain and petrol prices have bitten hard and sent a few growers to the wall. Butcher Clayton Wright says it’s a tough time for meat across the board but that ducks are fabulous at this time of year. Why? Because in winter they don’t need to flap their wings to cool down so they develop lovely big breasts.  Come summer when they’ll be flapping like crazy the poor little things wither away to A-cups. Make the most of it at Universal where they’re smoking them over jasmine tea and serving them with spiced eggplant and green bean sambal.
