At this time of year much of the country depends on Queensland for its winter vegetables but with the start of August bringing bad weather up north, supplies of many staples are limited, expensive or both. Rains in Victoria haven’t helped either with cauliflower and Brussels sprouts now a bit dearer than usual. But it’s business as usual in NSW and the Asian greens are particularly good and very cheap. Water spinach – or kangkung – is delicious, especially when the chefs at Ratu Sari get their hands on it. They simply stir fry it with chilli, garlic and belachan and bring it sizzling to the table on a cast iron plate.
