The best of the savoy cabbages have gone, but in their place there's excellent English spinach, so we're still well supplied with leafy greens. It comes up a treat in a buttery preparation accompanying poached eggs at Le Monde Café in Surry Hills and is a great starter as gomayogoshi at Sushi Bar Rashai in Annandale. Here, it's blanched and served cold with a little tamari and a nutty touch of sesame oil, the perfect lead-in to some excellent sushi.
