This hangar-sized temple of yum cha is the latest in luxurious Chinese dining from Zilver creators Henry Tang and his wife Chillie Poon. It’s an extravagantly furnished space with rich reds, dark timbers and the lucky number eight motif featured in almost every aspect of the design. The menu is a mix of Cantonese classics such as sweet and sour pork with lychees and pineapple $20.80 and contemporary creations such as the signature wok-seared beef fillet with foie gras paste $32.80. An impressive menagerie of live seafood market price includes pippies in XO sauce and lobster sashimi. The sheer variety of dim sum on offer during yum cha is astounding, from cooked-to-order chestnut cakes to stirfried salt-and-pepper crab and deep-fried prawn and mango rolls.
